This gnocchi salad has great texture and lots of flavor, plus it's naturally soy and dairy free. When we make this, the kids pick basil from the garden while the parents chop the veggies and cook the gnocchi.
Since not all gnocchi brands are safe for people following a dairy-free and soy-free diet, make sure to double-check labels as some refrigerated versions may contain dairy while other shelf-stable brands may contain soy. We trust Trader Joe's cauliflower gnocchi for this recipe.
