- Season chicken thighs. Using the stove top, heat the dutch oven on medium-high with 2 tablespoons of oil.
- Add uncooked rice to the pot and mix everything together. Top it all off with the coconut milk.
- Remove lid. Chicken should be completely cooked through and rice should be soft now. Garnish with cilantro to taste and serve!

Notes
I recommend adding hot sauce if you like a little extra kick. My son likes this one a lot and it usually yields plenty for leftovers. This dish tastes great even a day or two after cooking.
